Commonly dried and ground into cayenne powder or used fresh in cooking for a spicy kick.
Popular in hot sauces, spice blends, and as a garnish for heat and colour.

The Ají Limón, also known as the Lemon Drop pepper, is a vibrant yellow chilli native to Peru. It’s prized for its bright, citrusy flavor with a distinct lemon-like tang, making it a favourite in Peruvian cooking for adding both heat and freshness to dishes.
Appearance: Small, cone-shaped pods (often slightly wrinkled) that ripen to a sunny yellow.
Flavour Profile: Tangy, fruity, and zesty — similar to a habanero’s fruitiness but without the same intense burn.
Heat Level: 15,000–30,000 Scoville Heat Units (SHU) — about 3–10 times hotter than a jalapeño, but milder than a habanero.

Bird’s eye chillies are small, intensely hot peppers, measuring about 2–4 centimeters in length, with heat levels of 50,000–100,000 Scoville Heat Units and a bright, slightly fruity flavour ideal for Southeast Asian cuisines.
Their SHU range of 50,000–100,000 places it well above jalapeños (2,500–8,000 SHU) and cayenne (30,000–50,000 SHU), but below habaneros (100,000–350,000 SHU) and ghost peppers (855,000–1,041,427 SHU)

The friggitello is a classic Italian sweet pepper, often called the Italian frying pepper. It’s typically harvested while still green and has a sweet, slightly tangy flavor with just a hint of bitterness. The flesh is thin-walled, making it quick to cook—especially when fried whole in olive oil, which is the traditional preparation in Tuscany.
On the Scoville scale, friggitello peppers range from 0 to 500 SHU, meaning they are very mild and often perceived as having no heat at all. There’s also a Greek variety that’s a bit sweeter and commonly used in salads or pickled.

Flavour & Use: They have a clean, sharp heat with a slightly fruity undertone, making them versatile for fresh use, drying, or cooking. They’re especially good in salsas, stir-fries, and spicy marinades.
