Aji Amarillo is a vibrant, medium-hot chili from Peru, measuring 12–15 cm in length and 2–3.5 cm in diameter, with a distinctive fruity, tropical flavour. The Aji Amarillo is known for its medium heat, comparable to that of cayenne peppers and tabasco chilies. It is 4 to 20 times hotter than a jalapeño, which typically ranges from 2,500 to 8,000 SHU.

A Scotch bonnet chilli is a small, extremely hot Caribbean pepper with a distinctive squat, bonnet‑like shape. Its typical size is 2.5–4 cm long and 2.5–3 cm wide, making it one of the more compact but powerfully spicy chillies available.

Cornish Chillies Jamaican Chilli & Ginger Sauce – Celebrate Cornwall’s rich global connections with this sweet, fruity sauce infused with the warmth of Jamaican chillies and a touch of ginger. Padrón peppers are small, green Spanish chilli peppers, typically about 5 cm (2 in) long with a slightly wrinkled, elongated shape. They’re most often harvested while still unripe and green, giving them a mild, slightly grassy flavour with a hint of nuttiness when cooked.
Their charm lies in the “pepper lottery” — while most are mild, a few can surprise you with noticeable heat. On the Scoville scale, they range from 500 to 2,500 SHU, meaning most are about as mild as a banana pepper, but the hotter ones can approach the lower end of a jalapeño’s heat. With this years heat waves, the plants have suffered some ‘heat stress’ and our Padron Peppers seem to be generally more spicier than usual.
They’re traditionally pan-fried in olive oil and sprinkled with coarse sea salt, making them a popular Spanish tapas dish.
